Baked Greek Salmon
This is the perfect dish for you to serve whenever you are craving homemade seafood. For the best results, make sure use the freshest salmon possible.
Makes: 4 servings
Total Prep Time: 25 minutes
Ingredients:
4 salmon fillets, skin removed
1 tsp. of extra virgin olive oil
¼ tsp. of salt
½ tsp. of black pepper
1 lemon, thinly sliced
2 cloves of garlic thinly sliced
8 sprigs of thyme
4 tomatoes, chopped
Directions:
Preheat the oven to 475 degrees.
Season the salmon fillets on both sides with a dash of salt and black pepper. Drizzle the olive oil over the top.
Grease a medium baking dish with olive oil. Add in the salmon fillets.
Top off with the lemon slices, garlic slices and thyme. Scatter the chopped tomatoes over the top.
Place into the oven to bake for 15 to 20 minutes or until cooked through.
Remove and cool for 5 minutes before serving.
